This is one of those drinks I make all the time when I want something refreshing but not too sweet. It’s light, crisp, and honestly just really easy to throw together with things I usually already have at home.

Cucumber and mint are such a simple combination, but when you add lemon into the mix, it becomes something really refreshing — especially on warm days or when you just want something cooling and hydrating.

I started making this as an alternative to store-bought lemonade, and now it’s one of my go-to drinks whenever I have fresh cucumbers in the fridge.

Ingredients (serves 2):

  • 1 large cucumber, peeled and chopped
  • Juice of 2 lemons (about 1/4 cup)
  • 6–8 fresh mint leaves
  • 1–2 tbsp honey, agave, or maple syrup (adjust to taste)
  • 1 cup cold water
  • 1/2 cup sparkling water or club soda (optional for fizz)
  • Ice cubes
  • Mint sprigs and cucumber ribbons, for garnish

Instructions:

Blend the Base:
In a blender, combine peeled cucumber, freshly squeezed lemon juice, a drizzle of honey or maple syrup, and a few fresh mint leaves. Blend until smooth.

Strain (Optional):
For a clear drink, strain through a fine mesh sieve. For a more pulpy texture, skip this step.

Serve:
Fill glasses with ice and pour the cucumber-mint mixture halfway up.

Top with Sparkle:
Add sparkling water to top off and stir gently.

Garnish:
Add a cucumber ribbon, a sprig of mint, or a slice of lemon for a refreshing, photogenic finish.


Tip: Let the mint steep in the blended cucumber mix for 15–30 minutes in the fridge before straining for an even more fragrant flavor.

What I like most about this mocktail is how clean it tastes. It doesn’t feel heavy or overly sweet — just fresh and light.

Sometimes I’ll adjust it depending on my mood. If I want it sharper, I add more lemon. If I want it softer, I add a bit more cucumber or water. And when I have guests over, I usually serve it in a big jug with lots of ice so it feels a bit more special.

It’s also one of those recipes where even if you don’t measure everything perfectly, it still turns out good.

When you start mixing it, the smell is the first thing you notice — fresh mint and lemon right away. It already feels refreshing before you even take a sip.

If you gently crush the mint leaves, it makes a big difference. The flavor comes out more, but it still stays smooth and not bitter. Once everything is chilled, the drink becomes even better because the flavors blend together nicely.
