Ingredients (serves 2):
- 1 large cucumber, peeled and chopped
- Juice of 2 lemons (about 1/4 cup)
- 6–8 fresh mint leaves
- 1–2 tbsp honey, agave, or maple syrup (adjust to taste)
- 1 cup cold water
- 1/2 cup sparkling water or club soda (optional for fizz)
- Ice cubes
- Mint sprigs and cucumber ribbons, for garnish
Instructions:
- Blend Base:
In a blender, combine the chopped cucumber, lemon juice, mint leaves, honey/agave, and cold water. Blend until smooth. - Strain (optional):
Strain through a fine mesh sieve or cheesecloth if you want a clearer drink. - Serve:
Fill glasses with ice. Pour the cucumber lemonade over the ice, filling each glass about 3/4 full. - Top with Sparkle:
Top with sparkling water if using, and stir gently. - Garnish & Enjoy:
Garnish with mint sprigs and cucumber ribbons or wheels.
