🥝 Frozen Kiwi Coconut Slush (Mocktail)

Ingredients (serves 2):

  • 3 ripe kiwis, peeled and chopped
  • 1/2 cup coconut milk (full-fat for creaminess)
  • Juice of 1/2 lime
  • 1–2 tbsp honey, agave, or maple syrup (to taste)
  • 1½ cups ice cubes
  • Mint or kiwi slices, for garnish

Instructions:

  1. Blend:
    Add kiwis, coconut milk, lime juice, sweetener, and ice to a blender. Blend on high until smooth and slushy.
  2. Taste & Adjust:
    Taste and add more sweetener or lime if needed.
  3. Serve Immediately:
    Pour into chilled glasses and garnish with a mint sprig or kiwi slice.

💡 Optional twist:

  • Add a pinch of sea salt or coconut flakes on top for extra texture.
  • For a cocktail version, a splash of white rum or coconut rum works beautifully.
