Time: 20 minutes (or 10 if using pre-cooked chicken)

🛒 Ingredients:

  • 2 large whole wheat or spinach tortillas
  • 1 grilled chicken breast, sliced (or 1 cup cooked chicken)
  • 1 ripe avocado, sliced or mashed
  • ½ cup shredded lettuce or spinach
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons plain Greek yogurt or mayo
  • 1 teaspoon Dijon or grainy mustard
  • Juice of ½ lemon or lime
  • Salt & pepper, to taste

🔥 Directions:

  1. Prep the sauce:
    Mix Greek yogurt (or mayo), mustard, lemon juice, salt, and pepper in a small bowl.
  2. Assemble the wraps:
    Lay out the tortillas. Spread a little sauce down the center of each.
    Layer with lettuce, chicken slices, avocado, tomatoes, and red onion.
  3. Wrap it up:
    Fold in the sides, then roll tightly from the bottom up like a burrito.
  4. Toast (optional):
    For extra crunch, grill in a pan over medium heat for 2–3 minutes per side.
  5. Serve:
    Slice in half and serve with fruit, salad, or veggie chips.

  • Add hummus for creaminess and fiber.
  • Use tempeh or tofu for a vegetarian version.
