Time: 20 minutes (or 10 if using pre-cooked chicken)
🛒 Ingredients:
- 2 large whole wheat or spinach tortillas
- 1 grilled chicken breast, sliced (or 1 cup cooked chicken)
- 1 ripe avocado, sliced or mashed
- ½ cup shredded lettuce or spinach
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- 2 tablespoons plain Greek yogurt or mayo
- 1 teaspoon Dijon or grainy mustard
- Juice of ½ lemon or lime
- Salt & pepper, to taste
🔥 Directions:
- Prep the sauce:
Mix Greek yogurt (or mayo), mustard, lemon juice, salt, and pepper in a small bowl. - Assemble the wraps:
Lay out the tortillas. Spread a little sauce down the center of each.
Layer with lettuce, chicken slices, avocado, tomatoes, and red onion. - Wrap it up:
Fold in the sides, then roll tightly from the bottom up like a burrito. - Toast (optional):
For extra crunch, grill in a pan over medium heat for 2–3 minutes per side. - Serve:
Slice in half and serve with fruit, salad, or veggie chips.
