Pork Tenderloin with Apple Sauce & Caramelized Onions
Ingredients (Serves 4)
For the pork:
- 1 pork tenderloin (500–700 g)
- Salt & pepper
- 2 tbsp olive oil
- 1 tbsp butter
- 2 sprigs fresh rosemary
For the caramelized onions:
- 2 large yellow onions, thinly sliced
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tbsp brown sugar (or honey)
- Pinch of salt
For the apple sauce:
- 2 apples, peeled and chopped
- ½ cup apple juice (or water)
- 1 tbsp butter
- ½ tsp cinnamon
- Salt to taste
Instructions
1. Cook the Pork
- Preheat your oven to 200°C (395°F).
- Season the pork tenderloin with salt and pepper.
- Heat the olive oil and butter in a pan. Sear the pork on all sides until nicely browned (2–3 minutes per side).
- Add rosemary, then transfer the pan (or the meat) to the oven.
- Roast for 15–20 minutes, or until the internal temperature reaches about 63°C (145°F).
- Let it rest for 5–10 minutes before slicing.
2. Make the Caramelized Onions
- In a skillet, heat butter and olive oil.
- Add sliced onions and a pinch of salt.
- Cook on low heat for 20–25 minutes, stirring occasionally.
- Add brown sugar or honey and cook for another 5 minutes until sticky and golden.
3. Prepare the Apple Sauce
- In a small pot, melt the butter and add the chopped apples.
- Add cinnamon and sauté for 2–3 minutes.
- Pour in the apple juice/water and simmer for 10–12 minutes until soft.
- Mash or blend until smooth (or leave chunky if you like).
Serving
Plate sliced pork, top with caramelized onions, and add a generous spoon of warm apple sauce.
Optional sides: roasted potatoes, mashed cauliflower, or a fresh green salad.
