🍗 Roasted Chicken with Honey, Lemon & Fig Jam Glaze

🥘 Ingredients
For the chicken:
- 4 bone-in chicken thighs (or breasts, but thighs stay juicier)
- 1 tbsp olive oil
- Salt + black pepper
- 1 tsp garlic powder
- 1 tsp paprika
For the glaze:
- 3 tbsp honey
- 2 tbsp fig jam (or fig spread)
- Zest of 1 lemon
- Juice of 1/2 lemon
- 1 tbsp soy sauce (optional—adds depth)
- 1 crushed garlic clove (or 1/2 tsp garlic paste)
- A pinch of chili flakes (optional but amazing!)
👩🍳 Instructions
1. Prep the chicken
- Preheat oven to 200°C / 400°F.
- Pat the chicken dry (helps it crisp).
- Rub with olive oil, salt, pepper, garlic powder, and paprika.
- Place in a baking dish, skin side up.
2. Make the glaze
In a small bowl mix:
Honey + fig jam + lemon zest + lemon juice + soy sauce + garlic + chili flakes.
Stir until smooth and glossy.
3. Roast
- Brush half the glaze over the chicken.
- Roast for 30 minutes.
- Brush with the remaining glaze.
- Roast another 10–15 minutes, or until the chicken is sticky, golden, and fully cooked (internal temp 74°C /165°F).
Tip: Turn on broil/grill for 1–2 minutes at the end for extra caramelization.
4. Serve
Plate with the pan juices spooned on top.
