🍗 Roasted Chicken with Honey, Lemon & Fig Jam Glaze

🥘 Ingredients

For the chicken:

  • 4 bone-in chicken thighs (or breasts, but thighs stay juicier)
  • 1 tbsp olive oil
  • Salt + black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika

For the glaze:

  • 3 tbsp honey
  • 2 tbsp fig jam (or fig spread)
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 tbsp soy sauce (optional—adds depth)
  • 1 crushed garlic clove (or 1/2 tsp garlic paste)
  • A pinch of chili flakes (optional but amazing!)

👩‍🍳 Instructions

1. Prep the chicken

  1. Preheat oven to 200°C / 400°F.
  2. Pat the chicken dry (helps it crisp).
  3. Rub with olive oil, salt, pepper, garlic powder, and paprika.
  4. Place in a baking dish, skin side up.

2. Make the glaze

In a small bowl mix:
Honey + fig jam + lemon zest + lemon juice + soy sauce + garlic + chili flakes.
Stir until smooth and glossy.


3. Roast

  1. Brush half the glaze over the chicken.
  2. Roast for 30 minutes.
  3. Brush with the remaining glaze.
  4. Roast another 10–15 minutes, or until the chicken is sticky, golden, and fully cooked (internal temp 74°C /165°F).

Tip: Turn on broil/grill for 1–2 minutes at the end for extra caramelization.


4. Serve

Plate with the pan juices spooned on top.

  • A fresh green salad
  • Couscous
