Pork Tenderloin with Apple Sauce & Caramelized Onions

Ingredients (Serves 4)

For the pork:

  • 1 pork tenderloin (500–700 g)
  • Salt & pepper
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 sprigs fresh rosemary

For the caramelized onions:

  • 2 large yellow onions, thinly sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp brown sugar (or honey)
  • Pinch of salt

For the apple sauce:

  • 2 apples, peeled and chopped
  • ½ cup apple juice (or water)
  • 1 tbsp butter
  • ½ tsp cinnamon
  • Salt to taste

Instructions

1. Cook the Pork

  1. Preheat your oven to 200°C (395°F).
  2. Season the pork tenderloin with salt and pepper.
  3. Heat the olive oil and butter in a pan. Sear the pork on all sides until nicely browned (2–3 minutes per side).
  4. Add rosemary, then transfer the pan (or the meat) to the oven.
  5. Roast for 15–20 minutes, or until the internal temperature reaches about 63°C (145°F).
  6. Let it rest for 5–10 minutes before slicing.

2. Make the Caramelized Onions

  1. In a skillet, heat butter and olive oil.
  2. Add sliced onions and a pinch of salt.
  3. Cook on low heat for 20–25 minutes, stirring occasionally.
  4. Add brown sugar or honey and cook for another 5 minutes until sticky and golden.

3. Prepare the Apple Sauce

  1. In a small pot, melt the butter and add the chopped apples.
  2. Add cinnamon and sauté for 2–3 minutes.
  3. Pour in the apple juice/water and simmer for 10–12 minutes until soft.
  4. Mash or blend until smooth (or leave chunky if you like).

Serving

Plate sliced pork, top with caramelized onions, and add a generous spoon of warm apple sauce.
Optional sides: roasted potatoes, mashed cauliflower, or a fresh green salad.
