For the whipped feta:

  • 1 block (200g) feta cheese
  • 1/3 cup plain Greek yogurt (or labneh)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • Optional: 1 small garlic clove, grated

For the topping:

  • 2 tablespoons honey
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 2 tablespoons shelled pistachios, roughly chopped
  • Fresh thyme leaves or rosemary (for garnish)
  • Optional: a pinch of smoked paprika

To serve:

  • Warm pita, toasted baguette slices, or crackers

  1. Make the spicy honey:
    In a small saucepan or microwave-safe bowl, warm the honey gently. Stir in chili flakes and set aside to infuse.
  2. Whip the feta:
    In a food processor, combine feta, Greek yogurt, olive oil, lemon zest, and garlic (if using). Blend until smooth and fluffyโ€”about 1โ€“2 minutes, scraping down the sides.
  3. Plate it:
    Spread the whipped feta in a shallow bowl or on a small platter. Create swoops with the back of a spoon.
  4. Top it:
    Drizzle with spicy honey, sprinkle chopped pistachios, and finish with fresh thyme or rosemary.
  5. Serve:
    Pair with toasted bread or crackers for dipping.
