🛒 Ingredients:

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1 ½ teaspoons baking powder
  • ½ teaspoon cinnamon
  • Pinch of salt
  • 1 ½ cups milk (dairy or non-dairy)
  • 1 egg (or flax egg*)
  • ¼ cup natural peanut butter
  • 2–3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Optional: ¼ cup chocolate chips or chopped nuts

📌 *Flax egg = 1 tbsp ground flax + 3 tbsp water, let sit 5 mins


🔥 Directions:

  1. Preheat oven to 375°F (190°C).
    Grease or line an 8×8-inch baking dish.
  2. Mix wet ingredients:
    In a bowl, whisk mashed bananas, milk, egg, peanut butter, syrup, and vanilla until smooth.
  3. Add dry ingredients:
    Stir in oats, baking powder, cinnamon, salt, and optional add-ins (like chocolate chips).
  4. Pour into dish:
    Spread evenly. You can top with banana slices, peanut butter drizzle, or more chocolate chips.
  5. Bake:
    30–35 minutes, or until set and golden. Let cool 5–10 mins before slicing.

  • Eat warm with yogurt or milk poured over.
  • Slice and refrigerate for up to 5 days – reheat in microwave or toaster oven.
