Yields: 2 sandwiches
Time: 15 minutes
🛒 Ingredients:
- 2 fresh croissants (preferably bakery or all-butter style)
- 2 large eggs
- 2 slices of cheddar, Swiss, or Gruyère cheese
- 2–4 slices of ham, smoked turkey, or crispy bacon
- 1 tablespoon butter
- Salt & pepper, to taste

🍳 Directions:
- Prepare eggs:
Crack the eggs into a bowl, whisk with salt and pepper. Scramble gently in a non-stick skillet with butter over medium-low heat until soft and fluffy. - Warm the croissants:
Slice croissants in half horizontally and warm them in the oven or toaster oven at 350°F (175°C) for 3–5 minutes until slightly crisp. - Assemble:
On the bottom half of each croissant, layer:- Optional swipe of Dijon mustard
- Cheese slice
- Ham/turkey/bacon
- Pile of soft scrambled eggs
- Optional tomato slice or arugula
- Melt & press (optional):
If you want it extra melty, return the assembled sandwich to the oven for 2–3 minutes or press it briefly in a sandwich press. - Serve warm:
Enjoy with coffee, fruit, or a mimosa if it’s a brunch vibe.
✨ Tips:
- Try smoked salmon + herbed cream cheese instead of meat and cheese.
- For a spicy kick, add sriracha mayo or pickled jalapeños.
