Ingredients (serves 2):
- 1/2 cup ripe mango (fresh or thawed frozen)
- 1/4 cup plain yogurt (or dairy-free yogurt)
- Juice of 1 lime
- 6–8 mint leaves
- 2 oz white rum
- 1–2 tsp honey, agave, or maple syrup (to taste)
- Sparkling water, to top
- Ice cubes
- Mango slices, mint sprigs, and lime wheels, for garnish
Instructions:
- Muddle Mint:
In a shaker, gently muddle mint leaves with lime juice and sweetener. - Blend Mango Base:
In a small blender or using an immersion blender, puree mango and yogurt until smooth. - Combine:
Add mango-yogurt mix and rum to the shaker. Shake well with ice for 15 seconds. - Serve:
Fill two glasses with ice. Divide the mango lassi mixture between them. - Top with Fizz:
Top each glass with sparkling water. Stir gently. - Garnish:
Add a mint sprig, a lime wheel, and a slice of mango.
