- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1 ยฝ teaspoons baking powder
- ยฝ teaspoon cinnamon
- Pinch of salt
- 1 ยฝ cups milk (dairy or non-dairy)
- 1 egg (or flax egg*)
- ยผ cup natural peanut butter
- 2โ3 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Optional: ยผ cup chocolate chips or chopped nuts

- Preheat oven to 375ยฐF (190ยฐC).
Grease or line an 8ร8-inch baking dish. - Mix wet ingredients:
In a bowl, whisk mashed bananas, milk, egg, peanut butter, syrup, and vanilla until smooth. - Add dry ingredients:
Stir in oats, baking powder, cinnamon, salt, and optional add-ins (like chocolate chips). - Pour into dish:
Spread evenly. You can top with banana slices, peanut butter drizzle, or more chocolate chips. - Bake:
30โ35 minutes, or until set and golden. Let cool 5โ10 mins before slicing.
