  • 1 small seedless watermelon
  • 4 oz (115g) feta cheese
  • 3 tablespoons cream cheese or Greek yogurt (for creaminess)
  • 1 tablespoon olive oil
  • Zest of 1/2 lemon
  • Fresh mint leaves (small or torn pieces)
  • Freshly ground black pepper (optional)
  • Toothpicks or small skewers (optional, for serving)

  1. Prep the watermelon:
    Cut the watermelon into bite-sized cubes (about 1 to 1.5 inches). Pat dry with a paper towel to remove excess moisture.
  2. Make the feta mousse:
    In a food processor or blender, combine feta, cream cheese (or yogurt), olive oil, and lemon zest. Blend until smooth and creamy.
  3. Assemble:
    Use a piping bag or small spoon to dollop or pipe a swirl of feta mousse onto each watermelon cube.
  4. Garnish:

  5. Serve chilled:
